Prawns on Grill  

 

8 Medium Large prawns per person- Garlic - olive oil -– coarse salt, 1 lemon

 

Preparation:

 

  • Mix the oil with the crushed Garlic
  • split each prawn from the head to tail
  • Place them on the hot grill- Brush the Prawns with the oil on the grill
  • Leave to cook for 6 or 7 minutes according to the size of the Prawns
  • Pour the Lemon juice on the prawns and serve.

Serve with rice and vegetable (courgettes, peppers, aubergines).

The vegetables can be cooked the same way as the fish cut in slices.

 


White Wine Marinade  Ingredients (for 4 persons)

 

800 g to 1kg of fish (monk fish, prawns, salmon, whiting, hake, cod…)

The juice of 3 limes – 1 glass of dry white wine - 1 onion -1/2 glass of olive oil-

1 clove,-thyme- bay leave – tarragon- mint-salt, pepper.

 

Preparation of the marinade:

 

Mix the oil, lime juice and the spices in a dish - then cut the fish in cubes or small portions –

Pour the marinade on the fish. Leave to marinate at least for 30 min

(not more than an hour otherwise the fish cooks with the lime). 

Take out the fish from the marinade

For the kebab, alternate vegetable cube and fish cube marinated on a stick. 

For small fillets cook directly on the grill.

Leave to cook for 5 to 10 minutes according to the size of the cubes or fillets of fish, add salt and pepper.

Serve with rice and vegetable (courgettes, peppers, aubergines).


 

Fish wrapped in Foil  Ingredients (for 4 persons)

 

800 g to 1kg of fish (hake, haddock, cod, salmon…) - 2 lemons - 4 tomatoes – fresh basil

– a little bit of curry powder - 1/2 glass of olive oil – coarse salt, (whole pepper for marinade)

black pepper

 

Preparation of the marinade:

 

Mix the oil, lemon juice and the spices in a dish - then cut the fish in cubes or small portions –

Pour the marinade on the fish.

Leave to marinate at least for 30 min (not more than an hour otherwise the fish cooks with the lemon).

Take out the fish from the marinade, make individual part, place them on the middle of a square of foil

add salt, pepper, herbs and 1 slice of lemon close them on the top cook in the oven.

Leave to cook for 15 to 20 minutes according to the size of the cubes or fillets of fish,

Serve with rice and vegetable (courgettes, peppers, aubergines).

The vegetables can be cooked the same way as the fish cut in slices leave to marinate for at least 30 min.
